If you’re looking to add some more vegetables into your diet, trick your kids into eating more vegetables, or just want a really nutritious, colorful lunch idea, then this is for you! This salad is really easy to make and almost everything is raw, so you don’t have to worry about cooking and spending more time preparing your meal. The only thing that I cooked were the purple sweet potatoes, but I cut them into small cubes so they would cook a lot faster. This is also great because you can cut up whatever you have around your kitchen and change the ingredients every time.
- A mixed green salad for the base
- 1 half of a cucumber
- Half of an avocado
- 1 rainbow carrot
- A few cherry tomatoes
- 1 small purple sweet potato
- Roughly a 1/2 cup of chick peas
- Half of a red pepper
- A chunk of purple cabbage
- A big ol’ scoop of garlic hummus with a tablespoon of hemp seeds on top
My favorite part of this salad is the garlic hummus with hemp seeds! Hemp seeds add a nice texture to the hummus, and they add so many vitamins and minerals. I use raw shelled hemp seeds from Manitoba Harvest. Just 3 tablespoons give you 110% of recommended manganese, 20% of zinc, 20% iron, 45% of magnesium, and so much more!
Luna loved this! She saw it and immediately asked if she could share it. She also likes cucumbers now because of this salad, so I’ll definitely continue to make this for her and see what else I can sneak in it!
