This is the easiest quinoa salad recipe ever! If you can cook quinoa and steam some veggies, then you’ll be able to make this in about 15-20 minutes. This meal gives you protein, vitamins and you can make enough to have left-overs for the next day. I always make sure to have some extra quinoa in the fridge so that I can whip up a quick meal for me or the kids. I prefer to use a tahini or goddess dressing with this because it compliments the quinoa and kale, and gives the salad a creamy texture. Luna really likes when I add a bit of tahini to it as well for some added salt.
