Another Foodie Friday is here! The week always seems to fly by and then I realize at the last minute that it’s Friday, or it passes by and I have no idea what day it is. I wanted to do another version of “what I ate”, but I know that realistically I won’t take a picture of every single thing that I eat. I definitely love to graze/snack, and this post would have a million pictures if I actually show every nibble that I take throughout the day. I focused on my main meals or anything substantial that I ate. I really enjoy seeing what other people eat. I love food and I think human nature makes us all a little bit nosy, but for me food is more than just something to eat. There is a huge difference in my overall mood, energy, and outlook on life if I’m not eating a balanced diet or eating too much sugar and other crap. Any sort of imbalance in vitamins and minerals will throw me off and make me feel like I’m walking into a perpetual wall. It’s something I try to avoid at all costs because it just puts me in a terrible place that I don’t want to be in. Anyway, for all you fellow food and health nerds out there, I hope that another post showing what a vegetarian ate in a day will give you some sort of inspiration, satisfaction, cravings, or some other positivity that can come from it!
Breakfast: A small smoothie with 1 banana, some pumpkin protein, spinach and some frozen strawberries (all organic). This picture is after I drank a good amount of the smoothie.
Breakfast 2: The smoothie wasn’t enough, so I made some gluten-free banana flax oatmeal, topped with fresh raspberries, mulberries, frozen wild blueberries, maple syrup and some Nuttzo 7 nut and seed butter (all organic).
Lunch: I made a quinoa bowl for me and Luna. It has (all organic) quinoa, chard, broccoli, carrots, hemp seeds and sweet pea shoots. I made a tahini and raw turmeric mustard dressing, which sounds weird, but was really tasty! Luna ate hers with tamari on top.
For dinner: Fred and I took the kids to Seoul Food D.C. for our favorite bibimbap. I had their seasonal vegan summer sprout bowl. It was full of sprouts, spicy tofu, and sticky white rice. Super tasty and filling. If you’re ever in the Silver Spring area, you should definitely check them out!
