Delicata squash is my favorite thing to eat during the fall season and tastes lovely roasted and stuffed with quinoa and mushrooms!
I have a slight obsession with squash lately, mostly delicata squash. I didn’t really like squash until recently, when I realized how versatile it is and how easy it is to cook! Slap on some olive oil, salt and pepper and bake for about 40 minutes and you have a delicious and perfect squash to eat with greens, grains or whatever else you want. I scrolled through pinterest for some easy stuffed delicata squash recipes, and I found a simple quinoa and kale recipe, but I modified it to add some mushrooms and a few other greens. The only thing you have to do is remove the seeds and then they’re ready for baking!
Delicata squash is packed full of vitamin A and C, plus iron and calcium. Once you add in the quinoa and greens, this meal has protein, and even more vitamins and minerals from the spinach and mushrooms.
