We had a few apples that were a little over-ripe and I really didn’t want to waste them, but I wanted to come up with something that was quick and easy to use all of them! I also wanted to make Luna something for breakfast that was new and a little bit different, so I attempted a baked apple and oatmeal dessert breakfast. It’s also the best time of year to try out all the different varieties of apples during their peak season. I’ve been experimenting with local and heirloom apples that I’ve never tried before and really enjoy it!
