Ah, pumpkin. Everything is pumpkin flavored now, and I mean everything. I’m in the camp that loves pumpkin and I’m not ashamed of it! It’s the best part of Fall and it means that it’s almost time for Halloween and Thanksgiving! This recipe is super simple and if you want to make it more home-made, then definitely make your own pumpkin flavored milk. Convenience and basically my unwillingness to wait for this delicious treat made me use the Almond Dream Pumpkin Spice milk. The second we got it at my work, I knew that I was going to use it in a chia seed pudding. The pumpkin almond milk would also be really delicious in overnight oats or in coffee, yummy! The other beautiful thing about this recipe is that you really don’t need exact measurements. Chia seed pudding is really based on the quantity that you want to make and the consistency you like for your pudding.
