It’s vegan pudding time! Welcome to the most delicious, amazingly rich and even healthy version of pudding. I love chocolate, avocados and bananas, so why not put them all together and make a delicious and decadent pudding that could double as a breakfast or dessert. To make this healthier, I substituted the chocolate for raw cacao, which also adds magnesium to this pudding! The avocados contain healthy fats to support your heart health, plus a ton of potassium from the bananas. This recipe is entirely vegan, gluten-free and mostly raw!
Traditional puddings are mostly made of sugar and dairy, but this uses raw cacao powder, which is free of added and refined sugars. A little bit of maple syrup goes a long way in this recipe, but feel free to add more if you want a sweeter taste. This could easily serve 4 people, but will keep in the fridge for 3-4 days in an air-tight container.
My favorite part of this recipe (besides how delicious it tastes!) is that you can make this with only 5 ingredients and a blender or food processor. Once everything is combined in a food processor, you should taste the pudding and add more maple syrup if the taste is too bitter. Cacao has a very strong flavor, similar to a very dark chocolate. It’s slightly bitter, and it definitely took me a while to enjoy the taste, but I have completely switched over from chocolate to just using raw cacao powder. I even love adding cacao to smoothies and other desserts instead of the overly sugary cocoa powder.
Another way to make this taste sweeter without having to use more maple syrup is adding berries on top. They’re naturally sweetened and taste amazing mixed in with the pudding. I personally like adding blueberries and raspberries, and even raw cacao nibs if I have them. They add a delicious crunch that works really well with the pudding and berries. I use frozen blueberries and raspberries when they aren’t in season. If you leave the bag out of the freezer for a few minutes, the berries slightly thaw out and become really juicy!
