I made this rice and root vegetable bowl for Luna’s lunch, but it was so easy and tasty that I thought I would do two-posts-in-a-day to include the recipe. Apollo kept grabbing at it while I tried to take a picture, and I was able to capture one with his cute, chubby little hand (insert heart eye emoji face here).
I noticed while I was making this that it’s definitely purple themed with the red kale that was dark purple in color, the purple sweet potatoes, and the carrots were actually purple on the outside and bright orange in the middle. Initially I thought that I should try to incorporate some different colors, but purple vegetables (and fruit) are really high in antioxidants, so I stuck with my original ingredients. I also love the taste of purple sweet potatoes with kale and crimini mushrooms. It’s a nice combination of texture and earthiness, plus the steamed rainbow carrots give a sweetness to the brown rice. I topped it off with some tahini dressing and soy sauce (Luna’s favorite) and voila! An easy and plant heavy lunch for Luna, Apollo and me.
