We’ve had a huge container full of red lentils sitting in our pantry for months. I would move it out of the way to look for other food, or push it to the back of the pantry and not even think about it. The lentils are also being stored in a really handy container that we could use for other things that we always have in bulk, i.e quinoa or brown rice. Today I made it my mission to actually use some of those darn lentils, even if I had to make a really weird concoction!
Red lentils cook super fast, like 10 minutes fast, and expand a lot when cooked. I made two cups, and I have enough left-overs to feed a small army (Apollo and Luna) for the next week! Feel free to adjust the recipe if you don’t need to make as much. They’re also packed full of protein, potassium, and fiber!
