Today felt like a summer day, even though it’s November. The weather in DC/MD is so weird around this time of year. One day it will feel like a perfect fall day, with a beautiful breeze and just cool enough to wear a sweatshirt, then the next day it will be 82 degrees outside. It must be odd to live in areas that don’t experience every season and where you can wear shorts in December. Don’t you miss sweaters? I would live in sweaters every day if I could.. maybe we should move up north? Anyway, today marks the beginning of all things Thanksgiving. I’m going to be working on an ebook with all plant-based sides, entrees and desserts for Thanksgiving! I’m super excited and Fred found a really crazy “vegducken” recipe that we’re going to make.
I’m going to work my way backwards and start with an easy dessert: a pumpkin and chocolate chip muffin. This is vegan, gluten-free and super yummy! It’s not overly pumpkin-y, but if that’s your thing then I would add an extra 1/2 cup to the batter. Let’s do it!
