These mashed potatoes are so easy and so delicious that you won’t even understand it! We finally bought a crock pot, 100 years late in the game, and I couldn’t be happier. My first experiment with it was some garlic mashed potatoes, and I am crazy happy with how they turned out and how easy using a crock pot was! This is a super simple recipe that is vegan, gluten-free and you will be hands free for 4-7 hours while the crock pot does all the work for you. Perfect for Thanksgiving, or really any day of the year, because I would absolutely eat these mashed potatoes all year round.
I used small red potatoes, cut them in half, and threw them in the crock pot. You can use the low setting and cook the potatoes for 7 hours, or use the higher heat setting and cook for 4-5 hours. I actually did both, and did low heat for 4 hours and then high heat for another 2 hours, just to test around with my crock pot and see how I liked to use it. After everything was fully cooked, I used Fred’s immersion blender and blended everything together while it was still in the crock pot. This was so much fun and made the best textured mashed potatoes ever! I left them slightly rustic and chunky because that’s how I like it, but you can blend these completely smooth or not blend them at all, your choice. It’s also pretty difficult to make mashed potatoes look super delicious in a picture, but these honestly taste amazing!
