Here we go, another simple side dish for Thanksgiving with roasted purple carrots, some big ol’ cloves of garlic, olive oil, and balsamic vinegar. Simple, 40 minutes, and only a handful of ingredients… that’s my kind of recipe. You can use regular orange carrots if you can’t find purple ones, but these were super cool because they were almost black after cooking, and the inside was a beautiful, deep purple color 🙂 This can easily be made vegan by omitting the goat cheese, but I love the contrast in color and it adds a really nice creaminess to the carrots. The choice is yours!
You can add this to your plate full of garlic mashed potatoes and savor all of the garlic perfection!
