Luna and I made gingerbread men! She’s been asking to make them for a few weeks and I told her that we would need to find a really good recipe, and I of course turned to Minimalist Baker. Her recipes are always easy to follow and delicious, and this time was no exception – we used her vegan and gluten-free gingerbread recipe. What I learned from making these cookies is that I am for sure a newb when it comes to piping icing and decorating baked goods. Fred bought me a really cool decorating kit by Wilton that comes with a bunch of piping bags and three different icing tips. We used plant-based food coloring to make the red icing, which was super easy. I made vegan icing with powered sugar and soy milk and added two packets of the red coloring to get the dark red color. Luna really wanted to make pink icing, but it didn’t work out for me! I’m excited to keep practicing and get better at decorating.
The cookie batter smelled like delicious pancakes and looked gorgeous – the molasses gave it such a rich color! The only thing that I modified in her recipe was adding a bit more fresh grated ginger. Even though I really don’t like ginger, I wanted these to have a true ginger taste. I’m working on incorporating more ginger into my diet because I know that it’s healthy for me, but it just reminds me of being pregnant and feeling sick, yuck!
Luna said she wanted to make her gingerbread men have evil faces (wild child), but she’s pretty talented with decorating cookies.

I used a simple icing recipe of mixing together 2 cups icing sugar with 2 tbsp soy milk. I let it sit for a minute to thicken up a bit and then added it to the piping bags. You can always add more sugar to the mixture if you need it to be a thicker consistency!
