Let’s begin 2016 with an easy and introductory green smoothie recipe, because I wish that I had started my plant-based journey with one! This incredibly easy smoothie is loaded with potassium, vitamin K, vitamin A, folate (just to name a few), plus protein from the nut butter and Omega-3 fatty acids. Talk about a healthy way to start the day, and you can even prepare it the night before and keep it in the fridge for a convenient breakfast. This is one of my “go-to” recipes that I was talking about in my first post in the guide to a plant-based kitchen.
What are your goals for this year? I don’t do resolutions since they’re too rigid and hard to follow, but I’m extremely goal oriented and I like to think really big picture and see how much I can accomplish in a year. I got the biggest promotion of my working career in 2015, but then I also fell in love with blogging, which makes 2016 the year of the blog. I have tons of ideas and I can’t wait to get creative over the next 12 months along with some other awesome bloggers out there. I’m also on week 3 of getting back in shape, and this isn’t about losing weight, but about getting strong again. I was probably in the best shape of my life right before I got pregnant with Apollo and I would love to sign up for a few races throughout the year.
My major goals of the year are:
- Consistent blogging
- Hitting the gym at least twice a week and taking yoga classes
- A family vacation
- Reading at least one book a month
