A light and refreshing salad with roasted cauliflower, black beans and arugula, simply topped with lime juice, olive oil and sunflower seeds.
I feel like I made a huge discovery in my cooking journey – pairing lime juice and cauliflower. I can’t believe how beautifully they work together, and the lime juice brings out the best flavor in the cauliflower, plus it’s so simple! This was so tasty that the self-proclaimed cauliflower hater, Luna, gobbled up a whole bowl of the salad and even ate it with an avocado dressing! She’s not very picky, but there a few things that she doesn’t like to eat, and I’ve slowly been able to make them in ways that she really enjoys. Victory on the mama front (and thank you Freddie for making the avocado dressing).
There are a few ways you can dress this salad, but I preferred to make mine very simple with an olive oil, salt and pepper dressing. You can add whatever you like, but the lime juice and olive oil is light enough that it doesn’t cover the unique flavor of the arugula.
I used two heads of cauliflower and broke them down into tiny florets, then coated them in 3 tbsp coconut oil and a healthy pinch of salt. I made sure that every piece was nicely coated in oil before putting them in a 350 F degree oven for roughly 35-40 minutes. Most recipes say to roast cauliflower for 20 minutes, but I found that mine took a little bit longer. If you want yours to be really brown and crispy, you can bump up the oven temperature to 400 or even 425 degrees and roast it for 30 minutes.
While the cauliflower is roasting, rinse your black beans and add them to a large bowl. I used the juice from half a lime to coat the black beans and then added about 2 cups of arugula and mixed everything together to coat the greens. I tossed it with about 2 tbsp olive oil, a little more lime juice, and a pinch of salt and pepper. After you add the roasted cauliflower to the bowl, make sure that you rub it into the lime juice and olive oil mix and top with a few sprinkles of roasted, unsalted sunflower seeds.
