A protein packed granola with gluten-free oats, quinoa, and a power seed blend, plus pistachios and pecans. Vegan, gluten-free and full of plant-based protein.
We’re officially snowed in, and while everyone else was sleeping in, I woke up and made a power seed and quinoa granola. It must have been the snow gods that gave me the entire morning to myself, but I enjoyed watching the snow fall while the granola was baking away. It was almost completely cooled off by the time the kids woke up, and we were able to spend a few minutes together looking out the window at the inches and inches of snow.
You can easily substitute the ingredients, since this is a really care-free recipe, and it’s really more of a grab whatever you have and throw together kind of granola. The quinoa adds a really nice crunchy texture to the granola, and this is packed full of protein from the quinoa, nuts and seeds. I personally love adding hemp seeds and chia seeds to anything that I can, and they were a given to add here. My favorite hemp seeds are from Manitoba Harvest and they’re full of omega’s, minerals and protein! I also used Nature’s Path Qi’a cereal for additional chia seeds, buckwheat groats and hemp seeds. This granola also makes a healthy snack and will keep you fuller, longer.
I loved eating this with soy milk, a tiny drizzle of maple syrup, and a sprinkle of extra pistachios and pecans. You could also add some tangerines or pears for a fruity addition, or add a few spoonfuls of granola to a bowl of yogurt or oatmeal for added crunch. Luna said that the granola tastes like peanut butter, which sounds perfect to me!
Apollo kept pointing to the snow on the window outside, and I opened it to let him touch it. He absolutely loved it! Luna and I went onto our balcony so she could try to catch some snowflakes in her mouth, a long-standing dream of hers. There was so much snow flying everywhere in the wind and she wasn’t able to catch one, but it was so funny to watch her try.
