A protein packed breakfast porridge made with amaranth and almond milk, plus vegan caramelized bananas!
Caramelized bananas are my new obsession. They are perfectly sweet, only require a few ingredients, and are ready to devour in 5 minutes! The outside of the banana becomes a crispy sugary layer, while the inside stays soft, which makes each bite insanely delicious. I could have easily eaten the entire bowl, but I was nice and shared a few.
Amaranth is hearty and has a strong grain-like taste, but when you mix it with the caramelized bananas, you get a perfectly indulgent breakfast! The sweetness from the bananas balances out the flavor and texture of amaranth, but you should test the porridge before adding any extra sweetener to make sure it has the right flavor for you. If you want it a bit sweeter you could add some maple syrup, or cook your amaranth with a sweetened almond or soy milk. I used unsweetened almond milk and didn’t add any maple syrup, but I had a piece of banana in almost every bite – I told you I would’ve devoured the whole bowl! I also added some of my power seed and quinoa granola and a few goji berries for some added crunch.

- Protein, about 26 g
- Fiber, about 13 g
- Plus iron, magnesium, calcium, vitamin C and vitamin B6
We caramelized our bananas on a cast iron griddle, and it worked out perfectly! If you don’t have a cast iron, a pan will do, but make sure that you pre-heat over medium-high heat before you start adding the coconut oil and the banana pieces.
