Today was another typical “snow day” in Maryland, which means that it was snowing like crazy all morning, then suddenly stopped and turned sunny and beautiful. I woke up this morning before both of the kids, and they were magically asleep long enough for me to get a head start on baking some double chocolate muffins with oat flour. The whole morning was pretty dark and cold, but the kids and I watched the snow fall as we waited for the muffins to finish. I adapted the recipe from My California Roots Double Chocolate Muffins, because I really wanted to bake something with oat flour. It’s completely gluten-free, and entirely vegan. They aren’t the prettiest muffins, but they are freaking delicious!
I’ve been putting too much pressure on myself to make this blog a “big thing” or thinking that if something doesn’t look perfect then I can’t post it or share it in this space. I’m starting to treat this blog as something that is really for me, and that it can look and feel the way that I want it to, even if it’s not going to be super popular or become viral. I stopped myself from creating content about things that I really love, and I’m going to start sharing those posts. Get ready for lots of talk about herbs, cruelty-free make up and skin care and possibly just photography based posts of pictures that I like.
Yesterday, Fred and I took the kids on a hike with our friend, Wanda. She’s the singer in Fred’s band, and lives near a really nice park/wood area that’s great for hiking. We didn’t realize that it would be completely muddy and wet from all of the melted snow, but we trudged through anyway. We had a lot of fun, leaving covered in dirt, and Luna ended up jumping right into the deepest part of a muddy stream, completely destroying her shoes. It’s going to be so nice when Spring comes and we can spend hours outside in the sun!
My breakfast from this morning was a big bowl of my power seed and quinoa granola with some dried pomegranate seeds, goji berries and a blend of three different types of cinnamon. It was heavenly! What did you have for breakfast?
