The perfect soup for beginners, this vegan potato soup takes under 30 minutes to make and is perfect to warm you up on these cold, winter days.
Another snow day meant another day stuck inside with the kids. I think we’re all getting a little bit stir crazy about not being able to spend enough time outside. We’re all really looking forward to Spring time, hiking, playground time, and even just blowing bubbles in the grass. This will be Apollo’s first spring as a true toddler and I know that he’ll love going down the slide and playing with Luna on the playground.
Since we obviously weren’t going to leave the house in a snow storm, I made the kids a simple, but delicious vegan potato soup with coconut milk. This is definitely a beginner level recipe, but that’s why I love it. There’s nothing over the top, the ingredients are easy to find and generally in everyone’s kitchen, and the whole thing is ready in under 30 minutes! I used a bunch of rainbow potatoes and one large Japanese sweet potato (they have the best flavor!), full fat coconut milk, shallots, garlic, and fresh lemon juice. I think you would traditionally peel the potatoes before adding them to the broth, but that seems really wasteful and the skins add so much nutritional value to the soup.
On a completely different topic, I’ve been doing high intensity/strength training workouts in our house a few nights a week and really like it!
