A healthy chia pudding topped with a decadent vegan avocado, peanut butter and cacao mousse.
This could possibly be my favorite recipe on this blog to date, which is pretty monumental. Seriously, I already loved avocado pudding, but when you add in powdered peanut butter and coconut nectar, it becomes the perfect topping for chia pudding. Throw in some fresh strawberries, blueberries or raspberries, and this is the PERFECT combination. It also just happened to become summer overnight in the DC area, so I’m in full on celebration mode today. I never realize how much I’m affected by the change in temperature until I can feel the warmth on my skin after months of gray, cold weather and my mood is instantly lifted. Let’s all party outside with our chia pudding and toast to the future… or do cartwheels in the grass, whatever makes you happy!
Chia pudding is probably going to be my “thing” for 2016, meaning I’m going to come up with 8 million different ways to make it and try as many flavor combinations as possible. My first venture in the chia pudding world was my pumpkin almond milk chia seed pudding from when I first started blogging regularly. I can’t wait for all of the spring and summer fruits to be in season to make really fresh and vibrant flavors (think pineapple, mango, stone fruit and berries!). I hope you’re as excited as I am!
This pudding has a simple base of unsweetened almond milk with chia seeds, that I kept in an air tight container in the fridge overnight. If I’m going to be completely honest, I actually kept mine in the fridge for two nights, because I really wanted the chia seeds to soak up as much almond milk as possible. Runny pudding does not sound tasty. The avocado, peanut butter and cacao mousse is similar to my avocado banana chocolate pudding, but I added in some powdered peanut butter and coconut nectar. This is probably more of a pudding consistency than a mousse, but I didn’t want to call this chia pudding with pudding on top (b-o-r-i-n-g), especially since this is so far from boring and satisfies my insane sweet tooth. Plus, the powdered peanut butter also has chia seeds in it, so this has super-duper chia power.
