A vegan mango lassi made with coconut cream instead of yogurt, plus a blueberry smoothie layered on top!
It’s safe to say that Fred and I are addicted to Indian food. There’s a delicious Indian restaurant close to my work that makes mostly vegan/vegetarian dishes, one of them being jackfruit in korma sauce (so good! if you haven’t had jackfruit, you should try it!). Fred wouldn’t stop talking about it when we ate it on Valentine’s Day, and a few weeks ago we treated ourselves to a HUGE take out dinner. I mean, we do not play around when we order Indian food. I think I could eat my body weight or more in aloo gobi and extra spicy channa masala. The restaurant treated Luna to a free mango lassi, which she had never tried before, and absolutely loved it. It’s actually pretty bizarre because Luna despises anything and everything involving yogurt, but how can you not like a creamy, mango milkshake-like drink?
On the flip side, Apollo is obsessed with mangoes, and I knew that I had to make a home-made vegan mango lassi for the kiddos. I replaced the yogurt with coconut cream and then layered the lassi with a blueberry smoothie, mostly because it looks gorgeous and the flavor combination was perfect for this beautiful Spring weather. To get the coconut cream, I put a can of coconut milk in the freezer for barely 30 minutes, and the top creamy layer was firm enough that I could scoop it out, and not get any of the coconut water at the bottom. You can also buy just the coconut cream in a can, place that in the fridge overnight or in the freezer to make it thicken up.
Chubby little 19 month old hands couldn’t resist attacking the mangoes and flowers while I was taking the final pictures (which is how it goes for EVERY blog post), but I love sharing these photos. I know that I’ll look back at the pictures when Apollo isn’t a toddler anymore and feel all the mom feels. It gets harder every day watching my babies grow up, but I’m doing my best by growing with them. Motherhood is so incredibly difficult and taxing, but beautiful and perfect at the same time.
