Dinner time is one of the most important parts of my day, and I always make sure that my kids are able to enjoy healthy and flavorful meals. I’ve created three easy recipes using the Gardein Chipotle Black Bean Burger and the Gardein Mini Crispy Crabless Cakes!
There are plenty of weeknights where I’m rushing home from work after a long 8-10 hour work day, and get home just in time to cook Apollo and Luna dinner. Even though I’m exhausted and would rather sprawl out across the floor or promptly fall asleep in my bed, I make dinner time a priority for my family. I love that we’re already creating traditions around food and family time, and whenever Luna enjoys something that Fred and I cooked she tells us that we’re the “best cookers ever” and Apollo starts dancing! I hope that since we’re teaching our children the importance of healthy eating, that they’ll have a great relationship with food as they grow up. I also hope that my kids can see just how easily our food choices affect the environment and others. The meat industry produces more greenhouse gases than the entire transportation sector combined! While it takes 52.8 gallons of water to produce 1 pound of Gardein, it takes 1,799 gallons of water to produce 1 pound of beef. Each of the recipes were created to give you multiple options using the Mini Crispy Crabless Cakes and the Chipotle Black Bean Burgers. I made a quinoa and kale salad with miso and turmeric tofu that can be used with either Gardein product, and be used in a soft taco or as a hearty salad bowl. I added a spicy mayo to the tacos that tastes amazing with the black bean burgers. You could also add that to the quinoa and crabless cakes for a creamy and spicy sauce. The options are really endless with how you use the ingredients!
