Healthy and filling vegan banana pancakes made with only 3-4 ingredients, plus a delicious blueberry chia jam!
Happy Mother’s Day weekend! If you’re a mom, I hope you get the chance to relax a little bit and if you’re celebrating a mom, then I hope you have a great time. I will be working in the morning and then hopefully spending some quality time with the kiddos and Freddie. What are your plans for this weekend? If you are still looking for a breakfast or bunch recipe, I have a simple 3-4 ingredient pancake recipe that is hella trendy, but I topped mine with a blueberry chia jam! YUM!
The pancakes are trendy because they’re another “3 ingredient” banana pancake recipe. This has been crazy popular all over the internet, but usually with eggs and banana as the main ingredients. This time we’re replacing the eggs with gluten-free oats, plus ripe bananas and almond milk to make a vegan version. I also have a second chocolate option with 2 tablespoons of cocoa powder. The cocoa powder which isn’t too sweet, but you could add fresh fruit or vanilla extract to make these a little bit sweeter. These are basically oatmeal in pancake form, perfect for any oatmeal lover!
What’s great about the blueberry chia jam is that it’s as easy as throwing everything into a pot and letting it simmer for 20 minutes while you make the pancakes. The chia seeds help naturally thicken the jam and you can use frozen or fresh blueberries. I actually used frozen blueberries, but now that fresh ones are in season I’ll probably switch next time. You can also enjoy the jam on bread, I would just use it all within a few days since there isn’t added sugar or pectin. I have a similar recipe for cherry chia jam, too, so you can use whatever fruit you like the most!
This is part one of a two-part series with how to use blueberry and chia seeds. The recipes came about mostly because my kids are OBSESSED with blueberries, which means I’m constantly trying to find new ways to use them, and also because I love chia seeds. Tomorrow’s post will be a simple recipe for blueberry and acai chia pudding with cherry banana ice cream! You could even eat the pancakes and chia pudding together for a delicious and healthy brunch.
