Today I’m sharing a super simple lemon garlic pasta recipe that you can make in under 25 minutes. It’s perfect for a quick, but delicious meal and something that I was craving ALL week. Literally, ALLLL week long. I just wanted some creamy, garlic covered pasta, but I was really busy and barely had any time to cook. I’m not sure if my pasta cravings started because it’s been raining for an ENTIRE month and I needed comfort food, or if my body just wanted extra carbohydrates, but this satisfied all of my cravings. I added oven roasted tomatoes and crushed walnuts on top, which brings a ton of flavor and texture. It’s odd that there aren’t a ton of pasta recipes on the blog because we eat pasta or spaghetti a few times a week. It’s constantly in rotation, usually with broccoli for the kids or asparagus when it’s in season. We always use gluten-free pasta, usually made from brown rice, but you can use whatever type of pasta you like.
My favorite part was making the lemon garlic sauce. It’s as easy as roasting a head of garlic (at the same time as the tomatoes), and adding it to a blender with lemon juice, olive oil, salt and pepper. Simple, super fast and incredibly delicious. I made this to just feed myself and Apollo, but you can easily double or triple the ingredients if you want to make this recipe to feed more than 2 people. If you do want to make more than 2 servings, I’d recommend roasting 2-3 heads of garlic and 1-2 pints of cherry tomatoes. You can also add some red chili flakes on top for a little bit of heat and chopped garlic to bring out some intense garlic flavor.
