A delicious mixed berry smoothie with vegan yogurt, rich peanut butter and a spoonful of coconut cream. The perfect summer time smoothie!
It’s been quiet around the blog this week, mostly because I’ve been dancing outside in the sunshine while simultaneously fighting allergies or a cold, I’m not sure exactly which one. On the positive side, this week has been beautifulll and lovely for my soul.
I definitely crave smoothies when it’s 95 degrees outside, but I also want them to be filling. Most of the time, I’m a bottomless pit that can easily eat a huge smoothie and still need an entire meal along with it. The easiest way for me to stay full after a smoothie is adding a lot of fat and making sure that the smoothie is pretty creamy. For this mixed berry smoothie recipe, I used frozen mixed berries, a dairy-free blueberry yogurt, and almond milk. After the mixed berries are blended with the yogurt, I topped the smoothies with creamy organic peanut butter and full fat coconut cream. The peanut butter and coconut cream end up mixing into the smoothie and making it taste creamy and delicious.
What are you plans for this summer? Fred and I are finally taking a week off from work to go on a family vacation with the kids. It’s a sort-of camping trip in Pennsylvania, and I couldn’t be more excited. We went to REI to find one of those plastic egg containers that you put on your car roof to carry all of your goods, but those damn things are more than $400! I think we’ll pass on that, and stick to a bunch of over-stuffed bags. I’m hoping to spend a lot of time on the water kayaking, maybe sailing and taking pictures in the woods and on top of the mountains. It’s a week away from computers, cell phone service, and hopefully a chance to really unplug and unwind. Hello VACATION!
