A delicious and simple grilled corn recipe with home-made vegan compound butter packed full of chives and topped with spicy jalapeno slices.
I’m finally posting this grilled corn recipe, which I actually meant to post last week, but ya know… life happens. We were busy with work and playing with the kids, plus I’ve been practicing the art of slowing down and enjoying it immensely. I’ve also been trying to spend a lot more time at the gym, which is pretty hard to navigate with work and the kiddos, so any free time has become gym time. Sorry, folks! I’ll be posting more regularly again, since I think I have the routine down now.
I also have something to admit, I only recently started eating corn. I’m pretty sure that I actually realllly disliked it for most of my life. Once I figured out that its super easy to grill corn without any fancy equipment and also that it can be eaten raw in salsa (one of my favorite ways to eat corn!) I decided that I could enjoy it. I added a home-made vegan compound butter with chives and chopped up some jalapeno and this was a delicious little side dish. I’m all about grilled corn IN the husk, but you can also remove the husk from the corn and wrap it in aluminum foil. I like the keep the husks on because they act like little handles for the corn, they’re beautiful and I personally think the corn tastes better when it’s grilled that way.
Don’t be afraid of making compound butter – it is SO easy. You’ll need 4 oz of butter, I used the Miyoko’s cultured butter, and 2 tablespoons of fresh chives. This vegan butter tastes very similar to dairy butter, and it has the perfect consistency. You’re going to blend it with the fresh chives and a little bit of olive oil until everything is fully combined. After that, I rolled it in plastic wrap and let it set in the fridge for an hour so that it would stay together when I wanted to slice it. It’s really delicious! You can swap out the chives for any other herbs that you like, or even throw in some spices. It was my first time making compound butter, but definitely not the last. It was really fun!
