I’m back with a delicious Asian style marinated tofu and green bean salad. I honestly didn’t think I would be back, at least for a long time. I’ve been struggling with a major creative block and had pretty much decided that I was going to stop blogging. I find the whole thing pretty frustrating at times, and social media is exhausting.
Instagram has become a silly popularity contest that I don’t want to participant in, and the shout out competitions drive me bananas. It rarely feels like people are sincere about building a community now, but more so who can gain followers the fastest. There are so many spam accounts that follow you and then unfollow you almost immediately. I’m sorry that I don’t follow people back right away, but I do have a life outside of my phone that I try to enjoy. The more time that I spent away from blogging and everything else that comes along with it, the more that I really felt like never coming back.
I’ve been itching to try out some new things on this space and share more than just recipes. While being a foodie is still a huge part of my life, I also love a crap ton of other things and the photography aspect is my favorite part about blogging. I’m hoping to incorporate more fitness, nature and green living posts, since that’s a huge part of how I live my life.
I’m still trying to figure how and what I’ll be changing about Apollo & Luna, but I’m trying to remember why I started doing this in the first place and not let it be such a silly stressor in my life. I’m lucky that this is essentially still a hobby for me, since my main income comes from my full-time #bosslady job, and I can take time off from the blog if I need to. I’m also excited to see what direction(s) I can steer my creativity and do it unabashedly.
Now, back to this recipe, which includes some of my favorite flavors! The marinated tofu is really easy, but I’d recommend preparing the marinade the night before you plan on using it. I had to wait around for a couple of hours before I could bake the tofu, and it was torture for me. The combination of tamari, rice vinegar, chili and garlic smells SO good, and I was dying to eat the tofu. You can make it a few hours beforehand if that’s easier for you, but really make sure that the tofu absorbs as much of the marinade as possible.
