I have been obsessed with this crazy simple breakfast toast. It’s been my go-to snack after a tiring workout, and it keeps me full and energized if I eat before my workouts, too. This reminds me of a healthier version of french toast once you add a drizzle of maple syrup on top, because the bread soaks up the syrup and it feels incredibly decadent. I like to eat additional fruit on the side, mostly golden kiwis (they’re the best!), and just looking at these pictures makes me salivate!
This breakfast toast “recipe” is also another excuse for me to indulge in my peanut butter obsession. I now have a recipe with peanut butter for every occasion: breakfast toast, in a smoothie, as a peanut sauce with noodles and as a topping in chia pudding – the options are endless!
You could easily whip up your own breakfast toast without a recipe, but this is seriously so tasty (and beautiful) that I had to share it. I love that this tastes like a dessert, but it’s actually packed full of protein, antioxidants, and vitamin C. If you can’t or don’t eat peanut butter, feel free to swap it for almond butter, sunflower butter, or whatever other nut butter you prefer.
I like to add a handful of raw cacao nibs for added crunch and their magnesium content, which definitely helps me after I exercise. I’ve noticed that since I started exercising a lot more, my muscles are obviously sore, but magnesium helps me recover from the soreness a lot faster. I’ve also been more restless at night, but if I add more magnesium into my diet then I’m able to sleep better.
