A delicious vegan and gluten-free recipe with spicy cauliflower rice, heaps of green pepper, tomatoes, onion and garlic, plus corn and cilantro on top.
Now that we’ve been back from paradise for a few days, it hit me that it’s up to us to really keep our outdoorsy dreams alive. Frederick just bought a really rad backpack that Apollo can stand in while we’re hiking. We’re hoping to find some family friendly trails on the east coast to start hiking with Luna as soon as the weather starts to cool down. Shockingly, Luna starts kindergarten in three weeks and is officially in ballet (she was in pre-ballet this past year), which means we need to get all of our gear under control so we can hit the road whenever we have free time.
It also hit me that because I was essentially grain-free while on vacation, a lot of my weird stomach and digestive issues were non-existent. I’m definitely a carb lover, especially brown rice and brown rice pasta, but I can rarely finish a meal without my stomach feeling bloated or upset. While we already don’t really eat gluten at our house already, I’m starting to wonder if it’s something entirely different to blame. I’m not a huge fan of elimination diets, but I think it’s the best way to pinpoint the cause of my stomach problems. While this recipe isn’t entirely grain-free because of the corn, I’m going to start with baby steps and work my up to completely eliminating certain foods for a week or two at a time.
This cauliflower rice recipe is the start of my investigation, and I’ll happily eat this even if grains aren’t the culprit. I’m calling this recipe rainbow spicy cauliflower rice because I used beautiful organic rainbow tomatoes, green peppers, yellow corn, and red onion, with a side of spinach. I added jalapeno for heat, and a ton of garlic. I kept the corn raw because that’s my favorite way to eat it, evidence being my salsa and zucchini salad recipes, but you can totally grill it or steam it.
