A delicious and simple vegan turmeric pumpkin smoothie recipe that’s perfect for the end of summer!
I’m a little TOO excited for all things fall and Halloween, but I’m not afraid to admit it. I’ve been a hardcore Halloween addict my entire life and October is definitely my favorite month of the year. I was so obsessed with Halloween growing up, that I painted my bedroom black and orange when I was sixteen and had Halloween decorations in my room ALL year. No shame, I still love it.
October is the month with the best weather in Maryland, the leaves start to change colors, and it’s the month of our wedding anniversary. I think everyone has a season that makes them feel like the best version of themselves, and for me that’s October.
In an attempt to channel those October happy vibes and get myself through these last few weeks of heat, I made a simple turmeric pumpkin smoothie. This smoothie only takes a couple of minutes in a blender and you’ve got yourself a tasty breakfast or snack that has vitamin E, C and A, potassium, fiber, and antioxidants. I’ve been increasing my intake of turmeric from working super long days and not getting enough rest, but feel free to add even more turmeric to your smoothies if you want a bit of a kick.
During the last few weeks, I’ve been slowly weaning Apollo from breastfeeding. He just turned two and still doesn’t sleep through the night, which means no one is sleeping enough. The first couple of nights were really brutal and I didn’t sleep AT ALL, but slowly he has been sleeping for longer stretches at night and putting himself back to sleep. Apollo seems a lot happier now that he’s been sleeping more and has way fewer tantrums during the day. He’s also getting really good at feeding himself with utensils and drinking out of a full size cup!
Luna turns 6 tomorrow (!!!) and I can’t believe it! My baby girl is getting so tall, smart and nurturing. She’s a wonderful big sister and has the best relationship with Apollo. They are best friends and Luna has taught him so much. I’m so happy that they have such a close relationship.
While Luna is in school, I’m going to make her home-made vegan cupcakes put up decorations for her birthday. I can’t wait to see her reaction and I’ll be sure to share the recipe!
I hope you’re having a fabulous September and enjoying the final weeks of summer!
