While I love avocado on my toast, today I’m sharing vegan toast 7 ways without it. All 7 types are simple, filled with healthy fruits and vegetables, and are easy to substitute with your favorite ingredients!
Toast is by far my favorite thing to eat for breakfast (and every other meal if I’m behind honest)! I am a huge fan of avocado toast, and while I eat that pretty regularly, I also love using other ingredients. My favorite for a while was peanut butter with fruit and maple syrup, but now I’ve been really into mixing savory and sweet ingredients.
For these “recipes”, which are really just super delicious toast combinations, I’m using a variety of dairy-free alternatives, fruit and kale! You can easily swap out ingredients, use different fruit, and try making your own toast recipes. This was really fun for me because I was able to be really creative and share something that I actually eat multiple times a week! I’d love to see what kind of toast creations you come up with. Vegan Toast 7 Ways without Avocado
Kale and tahini toast is my favorite savory toast combination. It only takes a few minutes to quickly sautee a shallot or a few cloves of garlic, a handful of chopped up kale, and then add a generous pinch of salt and pepper. I spread the tahini on the bread first, then add the sautéed kale, making sure that I add as much garlic and onion as possible. I will sometimes add hot sauce and lemon juice to really intensify the flavors.
The second slice of vegan toast is new to me because it has vegan ricotta cheese, an ingredient that I could only recently find at the grocery store. This might be difficult for some of you to locate, but it’s from the brand Kite Hill and it’s AMAZING. It’s made from almonds and tastes incredible! If you’re unable to find it where you live, then you can swap it out for dairy-free yogurt, almond butter, or vegan cream cheese.
For the other savory option, I used a cilantro hummus (pre-made from the grocery store), sprouts, capers and a vegan cheese cut into small pieces. I really enjoy eating this one as a quick snack because it’s really simple to throw together when you’re in a pinch for time. You can use whatever flavor hummus you like, and I’ve used micro greens and other types of sprouts when I have them.
I find that eating toast on a regular basis actually helps me eat more fruit and protein for the breakfast, and also helps fuel me for the day. I’m actually pretty terrible about eating breakfast every day because of my work schedule, and being able to quickly make something that will give me a punch of vitamins and minerals in the morning really sets me up for a successful day.

Vegan Toast 7 Ways without Avocado

- 4-5 slices of bread, cut in half
- 1 tbsp tahini
- 1-2 tbsp dairy-free yogurt
- 1-2 tbsp nut butter
- 1 tbsp passion fruit
- 1 tsp chia seeds
- 4-5 raspberries
- 4-5 blackberries
- 3-4 cubes vegan cheese
- 1-2 tbsp vegan ricotta
- 1-2 tbsp vegan cream cheese
- golden kiwi, sliced
- 1 tbsp granola
- 1 tbsp pomegranate seeds
- 1/2 tbsp cacao nibs
- 1/4 cup kale chopped
- 1/2 small shallot, diced
- 1 tbsp hummus
- handful of sprouts
- 1 tsp capers
- 1 tsp maple syrup
- On a slice of toast, add 1-2 tbsp dairy-free yogurt, then top with kiwi slices and granola.
- On a slice of toast, add 1-2 tbsp vegan ricotta and top with raspberries.
- On a slice of toast, add 1-2 tbsp nut butter (I used almond butter) and top with passion fruit and chia seeds.
- On a slice of toast, add 1-2 tbsp vegan cream cheese, black berries and maple syrup.
- On a slice of toast, add 1-2 tbsp nut nutter, pomegranate seeds and cacao nibs.
- On a slice of toast, add 1 tbsp tahini and sauteed kale with onions.
- On a slice of toast, add 1 tbsp hummus, sprouts, capers and vegan cheese.
