This vegan peaches and cream chia pudding is another recipe for #chiapuddingmonth! We’re almost at the end of January, but I’m going to squeeze in as many chia pudding recipes as I can!
Peaches and Cream Chia Pudding
The gloomy winter weather we’ve been having is making me seriously miss stone fruit right now. I would love to be eating fresh peaches and plums, but frozen peaches were used in this recipe. Once stone fruit season is back in action, I would recommend using fresh fruit in this delicious peaches and cream chia pudding!
I was feeling really unmotivated the other morning because it was super foggy and dark out. In an effort to get out of my funk, I pushed myself to the gym and nailed a full body strength training workout! It was definitely what I needed that day, and I ended up making this peaches and cream chia pudding as an extension of my happy mood.
Working out, reading a book, and getting out of the house almost always make me feel better. I’m definitely introverted, but being around other people helps put things into perspective for me. I know that whatever is bothering me isn’t as bad as what other people are going through, and it helps me be grateful for what I have.
The base of the chia pudding has frozen peaches, chia seeds, almond milk and maple syrup. Since I let my pudding sit overnight, the frozen peaches thaw out and get really juicy. You could also add a plant-based peach flavored yogurt if you want this to be extra fruity and sweet!
For the peaches and cream topping, I lightly cooked frozen peaches with coconut sugar and then added coconut milk whipped cream! There are two ways to make the coconut cream, either using canned coconut milk or pre-made frozen coconut whipped cream. For the canned coconut milk, simply add the can to the fridge overnight, and then scoop out the coconut cream from the top when you’re reading to use it. If you decide to use the pre-made frozen whipped cream, it will be way sweeter because it has added cane sugar.
