I finally like dill! I was never a big fan of the way that dill smells and tastes, but when mixed with creamy tahini, it makes the perfect sauce for freekeh, lentils and roasted cauliflower.
This was one of the easiest dinners that I made recently. Freekeh is a throw it in the pot and let it do its thing kind of grain, and I used sprouted lentils which cook in 4 minutes! In my experience cauliflower takes a little bit longer than 30 minutes to roast, but you could steam it instead and have this whole dish ready in about 20 minutes! I also love that this sauce doesn’t require any fancy kitchen equipment, just add everything to a bowl and whisk together. Thank you to Lindsay from Dolly and Oatmeal – your dill tahini has converted me! I love how the dill tahini adds a nice creamy herb flavor to the starchy lentils and cumin roasted cauliflower. Plus, both of my kids gobbled this up! I was pleasantly surprised that they also seem to appreciate dill.
Now that it’s Spring (although today is cold again), I’d love to hear about your favorite vacations and your plans for this summer! I think Apollo is old enough now that I feel comfortable traveling with him. We drove to Delaware for Thanksgiving last year, and it was the smoothest family trip we’ve had, which is making me hopeful for some more adventures this summer. I’d love to take the kids to the beach and maybe even the mountains in West Virginia and Pennsylvania. Those with kids – what are your tips for taking trips with small children? Luna is easy and can entertain herself, but Apollo will be a little bit harder to keep happy for multiple hours on the road. Do you bring snacks and toys or take multiple pit stops along the way?
