Raw and vegan truffles that are made with only three ingredients and naturally sweetened with dates!
Truffles are seriously delicious and super easy to make because they don’t require any baking and only 2-3 ingredients. They’re also raw, vegan, and gluten-free. This recipe can make anywhere from 4-8 truffles, depending on how large you make them. I opted to coat a few in shredded coconut (yum!) and others in raw cacao powder.
I was very intimated whenever I would see any sort of raw dessert recipe, mostly because they require either soaking nuts, using complicated kitchen equipment, or ingredients that are really expensive. This recipe has some more “exotic” ingredients, but you can easily use them in multiple ways. I like to use raw cacao in puddings and smoothies, especially mixed with bananas and avocado! Dates can be used as a sweetener in almost any vegan dessert, and also taste great stuffed with almond butter and fruit. Seriously, you HAVE to try stuffed dates, it is life changing!
If you don’t own a high-speed blender of food processor, I’d recommend soaking the dates before you blend them. It will make it easier on your equipment, and also give your truffles the right consistency so you can roll them into balls and everything will stay together and not fall apart. The date mixture also gives the shredded coconut or cacao powder something to hold onto and not fall off.
Make sure that you place the truffles on parchment paper before cooling them in the fridge. This will make it easier for you later on when you want to remove the truffles from the fridge without getting them stuck on your plate. It also helps makes clean up super easy and can double as your surface for rolling the truffles in the coconut.
