Vegan Banana Bread Donuts & Peanut Butter Mousse
Please hide my donut pan. I’ve been baking home-made donuts almost every day this week, and I can’t stop! It started with me testing out a new banana bread recipe, but after three separate attempts, I needed a break. These banana bread donuts are really easy and only take about 10-15 minutes to whip up, and the peanut butter mousse is super simple. If you know that you’ll be making these ahead of time, then you should definitely refrigerate your canned coconut cream to make everything a bit easier.
The peanut butter mousse is as simple as adding everything to the blender and whipping it up. I mixed together creamy peanut butter, coconut cream, maple syrup and a spoonful of coconut oil until it was a nice, creamy texture. I then added the peanut butter mousse to a bowl and gently whipped the mixture a bit by hand to make it fluffier. We still don’t own a mixer of any kind, I should really buy one already, but I was able to whip this by hand. You can definitely make this in your mixer for an even fluffier texture.
Once the donuts are covered in mousse, I like to add a few pieces of chocolate. This just adds a nice crunchy texture, and you know, more sugar. These little chocolate chunks are from Enjoy life, which means they’re dairy-free, nut-free and soy-free. It’s embarrassing how many pieces of chocolate I ate while taking these pictures. If you don’t want to add chocolate, you could use fruit, shredded coconut or even pieces of pretzels, yum!
