Let’s ring in the New Year with a flavorful salad of black-eyed peas, romanesco and rainbow chard. This healthy and simple recipe is an easy way to bring flavor and nutrition to a plant-based meal.
Happy almost 2017! We’re going to ring in the New Year with the traditional black-eyed peas, but with a super green and healthy twist. I made some really simple sautéed rainbow chard with garlic and onion, hearty roasted romanesco and fiber rich black-eyed peas.
Romanesco is such a cool looking vegetable and has a very similar taste to cauliflower. I love roasting it with olive oil, salt and pepper and then adding fresh lemon juice right after it comes out of the oven. If you can’t find this psychedelic looking item, then you can use regular white cauliflower or broccoli instead.
While I don’t generally over indulge around the holidays, I usually spend this time of year reflecting on the past 12 months and eating as many vegetables as possible. This year definitely feels longer than previous ones, but that’s probably because so much weird shit happened. There were so many extremes throughout the year, and I was certainly tested quite a bit.
I started this year in a really bad place mentally and was feeling over-worked and not like myself. I was trying to take on way too much at one time and was working seven days a week. There was a period of time when I was going to give up blogging completely. For a few weeks during the summer, I completely unplugged from this space and had no intention of coming back. I didn’t check stats, didn’t think about new recipes or ingredients, and told Fred that I was going to delete everything.
An overly simplified way to describe how I was feeling was straight-up burn out. Although to me it was way more than that because my feelings weren’t simply about my blog, but more so about my entire world. After a few months of feeling like total shit and knowing that I needed a major change, I started meditating and working on myself.
This whole year for me was a long and ongoing process of personal growth, self-acceptance and not being so damn hard on myself. Instead of making resolutions for 2017, I just hope to continue on my path and really focus on my health and well-being for years to come.

For me, part of mental health work is making sure that I’m fueling my body with enough vitamins and minerals. I think a lot of people really underestimate how beneficial a plant-based diet can be, but it’s especially important for me. My body thrives on all the vegetable goodness, and I’ve been making it a point to eat as many varieties as possible. Chard, romanesco and fiber-rich black-eyed peas are a really easy way for me eat a flavorful, healthy and filling meal without too much work.
