This tropical mango smoothie is Apollo’s most requested snack. It’s creamy, packed full of delicious pineapple, orange and mango flavors – plus I like to sneak in hemp seeds and almond butter for added protein.
I’m pretty sure that Apollo’s 2-year-old dreams are to become Diego from “Go, Diego, Go!” and have a hang glider. True story, he just asked me if I saw his hang glider outside in the snow so he can ride it to his Abuelita’s house. He said that I can’t come because I’ll be at work… womp womp. He’s way too smart already, but that’s for the best.
When he’s not pretending to be chasing after pumas and tree frogs, he’s eating everything in sight. His appetite is what I imagine a growing teenager’s to be like, and his most frequent request is a mango smoothie. I like to sneak in hemp seeds and almond butter for added protein, but that’s optional. They only slightly alter the taste, but if you have a really strong blender then they should melt right in.
This tropical mango smoothie has a combination of pineapple almond milk yogurt, frozen mango and bananas. If you want a thicker, more ice cream like consistency, then use frozen bananas. Then, you can make it a full-blown smoothie bowl and add a bunch of toppings.
I like to add a splash of fresh orange juice or coconut water for flavor and to thin out the smoothie. Apollo likes to slurp his smoothies through his Drink Box – which is very convenient when we’re on the go.
You can easily adjust the ingredients to make this into much larger quantities. This is enough for two small smoothies, one for each of my kids, or one smoothie for me. This is nice because it’s:
